Abstract

ABSTRACT

Anemia is a condition where the body has lower levels of hemoglobin and erythrocytes than normal. Iron deficiency anemia in adolescent girls carries a higher risk as it causes a decrease in immune function, making individuals more susceptible to health issues. Anemia is more prone to occur in adolescent girls because they are in a growth phase that requires higher nutritional intake, including iron. The purpose of this study was to determine the characteristics of chicken fish roll and the protein and iron content if chicken fish roll with the addition of sardines and ear mushrooms.
This study uses an experimental method with the treatment of Substitution of Chicken Meat and Sardines with the Addition of Ear Mushrooms in the production of chicken fish roll to produce the most preferred product based on organoleptic factors (color, aroma, taste, texture, and overall acceptance) using a hedonic test. The product is made in a single production with substitutions of sardine fish and wood ear mushrooms in ratios of 75:25, 50:50, 25:75, and an addition of 10% wood ear mushrooms. The study is then followed by testing the protein and iron content in the most preferred chicken fish roll with the sardine fish and fresh wood ear mushroom substitution. The data analysis used is univariate.
Based on the organoleptic test, the most preferred formula is F2 with 50:50 substitution. One chicken fish roll weighing 25 grams contains 101.41 kcal energy, 4.34 grams protein, 8.32 grams fat, 2.81 grams carbohydrate, 0.36 mg iron, and 0.67 grams fiber. Food cost of chicken fish roll with Substitution of Chicken Meat and Sardines with the Addition of Ear Mushrooms is Rp.20,413 with a selling price per piece of Rp. 3,648. It is necessary to conduct laboratory tests to ensure the exact nutritional value content so that there are no errors in the data generated. It is necessary to reduce the cost of the selling price of chicken fish roll. replacement of ground chicken meat with regular chicken meat. It is necessary to add other vegetable combinations that are brightly colored. need to add iron source foods.
